Title: Sofrito (Basic Pork Filling)

2tbAchiote Fat
3 Cloves garlic, minced
1tsSalt
1/2tsOregano
1/4tsPepper
1 Green pepper, chopped
1cChopped green onions
1cn(8 oz) tomato sauce
3 Hawaiian red peppers,
  Minced
1/2cChopped Chinese parsley

Cut pork into small pieces. In a saucepan, heat achiote fat. Saute pork, garlic, salt, oregano, and pepper; lower heat and cook 30 minutes. Stir in green pepper, onions and tomato sauce; cook 1 more hour. Add red peppers and parsley. Makes 6 cups.
